The complexity and depth of flavor in this refreshing vinaigrette will bring most any salad to new heights. I forget how good it is and often find myself audibly saying, “WOW!” after that glorious first taste.
I’m not usually one to make my own salad dressing, but when I do this is the recipe I most often grab. The lime makes it immediately refreshing, and the honey, dijon, and chili powder each have a place in making it perfectly balanced and keeping you coming back for more.
I would expect to find something like it at a hip restaurant with a thoughtfully curated menu, but most of the time it’s in my fridge. Ha!
I use this vinaigrette for my Citrus Kale Salad recipe and they are the perfect pairing. You could also use it on anything Mexican inspired because of its lime-forward punch. Heck, I’d even add a dash more salt and use it as a chicken marinade for chicken on the grill! Once you taste it, you’ll know why I want it on everything! Enjoy!
Citrus Vinaigrette

3 T lime juice, about 2 limes worth
2 t honey
3 T olive oil
2 t dijon mustard
1/4 t chili powder
1/8 t salt
Directions
- Simply add all ingredients to a small bowl and whisk to combine.
- Dress your salad to your liking and enjoy!

- Store in the refrigerator in an airtight container for up to two weeks. You may need to warm slightly if the oils have solidified.
