Gluten Free Spicy Ginger & Molasses Cookies

These cookies are full of warm spices, fresh ginger, and molasses. I especially love making them around the holidays because it makes the whole house smell like gingerbread!

Right before I had my daughter I had a distinct craving for molasses cookies! I whipped them up and waddled around my kitchen fulfilling the craving to my hearts content! It seems the hankering still comes back decently often, so I’ve perfected a gluten free version of the holiday classic.

The mix of flavors in these cookies create holiday bliss on the palate! The molasses and ginger are an earthy match made in heaven, and you’ll even find savory spices like white pepper, coriander, and cayenne pepper to add some pleasant heat.

If you want to make this recipe vegan, you can replace butter with vegan butter and egg with a flax egg. I haven’t tried, but think it would be worth a whirl because of the incredible flavor! Enjoy!

Ingredients

  • 3/4 C butter

  • 1/2 C sugar

  • 1/2 C brown sugar

  • 1/4 C molasses

  • 1 egg

  • 1 1/2 tsp freshly grated ginger

  • 1 3/4 C gluten free AP flour

  • 3/4 C oat flour

  • 1 tsp cinnamon

  • 1/2 tsp ground cloves

  • 1/4 tsp cayenne pepper

  • 1/4 tsp nutmeg

  • 1/8 tsp white pepper

  • 1/8 tsp coriander

  • 1/4 tsp salt

  • 3/4 tsp baking powder

  • 1 T cornstarch

  • Turbinado sugar (for rolling)

Directions

  • Cream butter and sugars until fluffy.
  • Add egg, freshly grated ginger, and molasses. Mix until combined.
  • In a separate bowl, mix all dry ingredients.
  • Add dry ingredients to wet and mix until well combined.
  • Chill for at least 30 minutes and then roll into 1 tablespoon-size balls. Roll in turbinado sugar.
  • Bake for 10 minutes in an oven preheated to 350F. Enjoy!

  • I make my own oat flour at home. It’s cost-effective and easy! I buy my GF oats in bulk on Amazon (though if you can find it in store in bulk it may be cheaper) and blend them in a blender until flour-like. Then I just store in a gallon-size freezer bag in the freezer!
  • The cornstarch makes these cookies stay chewy! Add 1 T to most any cookie recipe that you want chewy.
